I have Celiac disease and IBS. Since switching to a Gluten free diet and makeing sure my personal care and suppliement products etc. are Gluten free I am free from all this discomfort that goes with this.
There are wonderful Gluten free foods in the health food stores. (Pastas,cereals,breads, baked goods, etc.)
I do not feel deprived as there is lots to choose from but very expensive.
I have not found cooking Gluten free much different at all. As cornstarch is great for gravy and sauce thinkeners. I have always been a from scratch person and not buy it already made in a box.
I am very careful with what I eat. When I go out to eat I am not shy to make my requests. It is very easy though when for food to cross contaminated most of the time is does not look any different. My body knows and reacts to the Gluten even if I do not know it was there. The outward reaction is bad but the damage that it does inside is what is the worst part. Our bodies need time to heal. I find yogurt helps with the spasms. Yes a natural cleanse with our YL products is wonderful. Makeing sure though the product does not have the gluten irratants in them for us.
I now check each product online before I buy them as I have bought many products that have wheat germ in them only to have the Celiac reaction and could not figure out why until I realized wheat germ, barley sprouts and oats are wonderful things for our skin and for cleansing etc. just not for me or anyone with Celiac Disease.
Yes sometimes we feel we have gotten rid of this disease as we heal. But as we start to let the irratant back into our diets they can damage without the outward reaction.
For me removing the Gluten from every part of life has been important for a comfortable life.
Yes I use oils, supplements, cleanse, personal care, cleaning and laundry products from YLEOs but I still can not eat Gluten.
Gary tells us that it is the way they harvest the Wheat and that he has harvested it the old way and has served it to Celiacs with no reaction. It would be wonderful if they would go back to harvesting the way the use to. Far less problems with eating if we did not change things and add to make things faster etc. All to do with ENZYMES not given the time to get into the wheat.
